Application & Proposal

We need room count, food and beverage outlets, banquet capacity, spa and pool facilities, and which departments are outsourced. Multi-property groups are scoped as a group with sampled sites.

Gap Review & Readiness

Stage 1 + Stage 2 Audit

Stage 2 runs during service. Kitchens at plating, receiving dock at delivery, plant rooms, fire pump test records, PMS access rights, and a walk of the guest floors with the duty manager.

Can one certificate cover a group of properties?
Yes, where a corporate office genuinely sets and monitors the system. The group holds the certificate, central functions are audited once, and individual properties are sampled across the three-year cycle with the sample size driven by property count and risk. Franchised properties operating their own procedures usually need their own certificates, because the group cannot evidence control over what it does not manage.
Do we need ISO 22000 or is HACCP enough for our restaurants?
For service catering, HACCP is what most local regulators and event clients recognise, and it is faster to implement across outlets. ISO 22000 adds management system structure: supplier control, verification, internal audit, management review. Properties running central production kitchens or packing product for retail sale move into manufacturing territory and generally need FSSC 22000 instead.
Our property serves European guests. Do GDPR and local privacy law both apply?
Frequently, yes. GDPR follows the data subject when you market to or host European guests, while the property’s own jurisdiction imposes its own regime, and both can bite on the same booking record. ISO/IEC 27701 is the practical way to run one privacy management system that maps to several regimes at once rather than maintaining parallel compliance programmes.
Will the audit disturb guests?
No. Auditors work back of house for most of the visit and follow the property’s own access rules on guest floors. Kitchen observation happens during service because that is when it is meaningful, and interviews are scheduled around shift patterns. Audit plans are built with the general manager so peak arrival and departure hours are avoided.
How does certification affect our insurance position?
Insurers price hospitality on claims history and on evidence of control. Documented fire drills, pool supervision records, kitchen incident investigations and contractor management give an underwriter something to look at other than the loss run. It rarely produces an automatic discount, but it materially changes renewal conversations and how a liability claim is defended.
Does SIS help us write the procedures?
No. Accreditation rules keep the certification body independent of the system it audits, so SIS assesses and certifies while a consultant or your own quality team prepares. That independence is the reason a corporate travel buyer or brand compliance office treats the certificate as evidence. A certificate from a body that wrote your manual proves nothing during due diligence.
