What it is

A structured method for controlling food safety hazards, set out in the Codex Alimentarius General Principles of Food Hygiene. Seven principles applied through twelve steps, resting on a foundation of good hygiene practice.

Who issues it

HACCP is a Codex method, not an ISO management system standard. Certification is issued by a certification body against the Codex principles; accreditation scope differs between accreditation bodies.

Validity

Certificates commonly run three years with annual surveillance; some buyer schemes and local authorities require an annual certificate instead.

Is HACCP a certification, and who accredits it?
HACCP is a method defined in the Codex Alimentarius General Principles of Food Hygiene rather than an ISO standard, but certification bodies do audit and certify against those principles. Accreditation arrangements vary: some accreditation bodies offer scope for HACCP schemes, others do not. Ask any certification body which accreditation, if any, its HACCP certificate carries before you buy it.
Should we certify HACCP or go straight to ISO 22000?
It depends who is asking and how soon. HACCP is faster and cheaper and satisfies many local regulators, event clients and smaller buyers. ISO 22000 adds the management system around the hazard analysis and is what larger buyers, exporters and retailers usually specify. Starting with HACCP and upgrading later is a normal path, and the hazard work carries across.
What counts as a validated critical limit?
Evidence that the limit actually controls the hazard: published cooking or pasteurisation data, a regulatory or scientific reference, a challenge test, or supplier process data. A limit copied from another operation with a different product, thickness or equipment is not validated. Auditors ask for the basis of the limit far more often than most operators expect.
How many critical control points should a kitchen have?
Fewer than most templates suggest. A CCP is a step where control is essential and loss of control means unsafe food, typically cooking, cooling, chilled storage, reheating and sometimes receipt. Piling everything into CCPs makes monitoring unmanageable and dilutes attention. Hazards that are controlled adequately by good hygiene practice belong there, not in the HACCP plan.
Do we need a certificate per outlet or one for the group?
Both approaches exist. A multi-site certificate can cover outlets running the same processes under one management structure, with a sample of sites audited each cycle. Where menus, equipment or ownership differ significantly, separate certificates are cleaner. The certificate must list what it covers, and clients checking it will compare that list against the site actually serving them.
What do auditors look at during the on-site visit?
They watch the operation and then check whether the records match it. Fridge and cooking temperature logs against thermometer calibration, cooling times for cooked product, raw and ready-to-eat segregation, allergen handling and cleaning between products, personal hygiene practice, pest control reports, and what was actually done the last time a limit was breached.
