ISO 22000 certifies a food safety management system across the whole chain: hazard analysis, prerequisite programmes, control points that are monitored and verified, traceability in both directions, and a recall procedure that has been tested. It is the system export buyers and retailers expect a supplier to hold.

What it is

A food safety management system standard for any organisation in the food chain: growers, processors, packers, transporters, caterers, and suppliers of ingredients or packaging. It combines hazard analysis with prerequisite programmes and management system discipline.

Who issues it

An accredited certification body issues the certificate. ISO 22000 on its own is not a GFSI-recognised scheme; FSSC 22000 adds sector prerequisite specifications and additional requirements to reach that benchmark.

Validity

Three-year certificate with annual surveillance audits, normally scheduled while production is running so controls can be seen operating.

Who gets asked for it

Processors, packers, cold stores, caterers, distributors and ingredient or packaging suppliers whose customers audit food safety before listing them.

Stage 1 + Stage 2 Audit

Stage 1 reviews hazard analysis, prerequisite programmes, flow diagrams and the verification plan. Stage 2 walks the line during production: CCP records, temperature logs, calibration, changeover and a traceability exercise.

The certificate names the sites and product categories a retailer’s vendor form asks for. Annual surveillance lands mid-production and works backwards from a batch you did not choose.

What is the difference between ISO 22000 and FSSC 22000?
ISO 22000 is the management system standard. FSSC 22000 is a certification scheme built from ISO 22000, a sector-specific prerequisite programme specification such as ISO/TS 22002-1, and a set of additional scheme requirements. FSSC 22000 is recognised by the Global Food Safety Initiative; ISO 22000 alone is not. Retailers that insist on a GFSI-recognised scheme will ask for FSSC.
How is ISO 22000 different from HACCP certification?
HACCP is the hazard analysis method, and ISO 22000 contains it. The difference is everything around it: scope and context, leadership, competence, communication along the chain, operational prerequisite programmes as a distinct control category, internal audit, management review and improvement. Many operators certify HACCP first for speed, then move to ISO 22000 when a buyer asks for a full management system.
What is the difference between an OPRP and a CCP?
Both control significant hazards. A CCP has a measurable critical limit at which loss of control is detected immediately and product is affected directly, such as a cook temperature. An OPRP controls a hazard through action criteria that are observable or measurable but do not give an instant pass or fail on that batch, such as allergen changeover cleaning. Auditors test the reasoning behind each classification.
Can transport and storage be certified under ISO 22000?
Yes. The standard applies to any organisation in the food chain, and cold stores, distribution and food transport operations are certified under it regularly. The hazard analysis covers temperature control, vehicle and container hygiene, segregation, pest control and traceability of consignments. This is why food logistics providers are often asked for it by manufacturers and retailers.
Do audits have to happen while we are producing?
Effectively yes. An auditor has to see CCP monitoring, hygiene practice, changeover and product handling as they actually run. For seasonal operations the audit is scheduled inside the production window, and surveillance audits are planned around it. Certifying a plant that is idle is not something an accredited body can meaningfully do.
Does the certificate cover all our products and sites?
Only those named on it. The certificate states the sites and the product categories or processes audited. Adding a new line, a new category or a new site requires an extension to scope, usually assessed at the next surveillance audit or, where the customer needs it sooner, at a separate visit. Buyers do check the scope wording against what they are purchasing.
